Peach and Blueberry Bake with Vanilla Mint Yogurt

    Ingredients
  • 6 fresh peaches, peeled and cut into quarters
  • 2 cups fresh blueberries
  • 1 teaspoon lemon zest
  • 1 teaspoon ground cinnamon
  • 1 cup light brown sugar
  • 2 tablespoons butter, diced into small cubes
  • 1½ cups vanilla Greek yogurt
  • 1 tablespoon finely chopped fresh mint

  1. Preheat oven to 375 degrees. Toss together first 6 ingredients in large mixing bowl until evenly distributed. Pour fruit mixture into buttered cast-iron skillet. Bake for 35 minutes. Let cool on wire rack for 15 minutes prior to serving.
  2. When ready to serve, combine yogurt and mint and mix thoroughly. Dollop yogurt mixture on top of baked fruit and serve.
