I’m married to an avid golfer. But when the opportunity arises to attend the world’s most famous golf tournament, I mainly tag along for the pimento cheese sandwiches. The crazy-low price, the soft white bread, the legendary spread, the crinkly green sandwich wrappers all make for the most famous sandwich that exists. Thousands of cooks, maybe more, have tried to re-create the recipe. As a woman who has saved wrappers and pinned them in her office for more than fifteen years, I can say that almost every recipe I’ve seen for the spread was written by someone who has overthought the ingredients. — Rebecca Lang

Makes 3 1/4 cups

    ingredients
  • 2 (8-ounce) blocks sharp cheddar cheese
  • 3/4 cup mayonnaise
  • 6 tablespoons undrained diced pimentos
  • 2 ounces cream cheese, softened
  • 1/4 teaspoon salt
steps
  1. Grate the cheddar using the large holes of a box grater. Combine the cheddar, mayonnaise, pimentos, cream cheese, and salt in the bowl of a stand mixer fitted with the paddle attachment. Mix on low speed for 1 minute.
  2. Store in the refrigerator in an airtight container for up to 1 week.
