Pineapple Relish

Makes 3 cups


  • 3 cups finely diced pineapple
  • ¼ cup finely diced red onion
  • Finely grated zest and juice of 1 lime
  • ½ teaspoon dry mustard
  • ½ teaspoon kosher salt (or to taste)
  • ½-⅔ cup pepper jelly
  • 2 tablespoons chopped fresh mint
  1. In a bowl, stir together pineapple, onion, lime zest and juice, mustard, and salt. Stir in enough pepper jelly to lightly bind mixture and make it glossy. Cover and refrigerate until lightly chilled, or up to 4 hours. Stir well before serving.
