Serves 6 to 8
1 tablespoon oil
1 red onion, large dice
6 garlic cloves, smashed
1 tablespoon minced ginger
5 pounds pork belly, large dice
1 cup distilled vinegar
1 cup soy sauce
1 teaspoon black peppercorns
5 bay leaves
2 tablespoons chicken powder (powdered bouillon)
1 cup coconut milk
3 scallions, sliced into 2-inch pieces
Salt and ground pepper to taste

- Heat a large pot over medium-high. Add oil then add onion, garlic, and ginger. Sauté until lightly browned, about 5 minutes, then add pork belly and cook, turning, until all sides are seared.
- Add 3 cups water, vinegar, soy, peppercorns, bay leaves, and chicken powder. Bring to a boil, then cover and lower heat to medium-low; simmer until pork is tender, about 45 minutes.
- Add coconut milk and scallion and continue to simmer 5 minutes more. Season with salt and pepper.
