Serves 6 to 8

    Ingredients
  • 1 tablespoon oil
  • 1 red onion, large dice
  • 6 garlic cloves, smashed
  • 1 tablespoon minced ginger
  • 5 pounds pork belly, large dice
  • 1 cup distilled vinegar
  • 1 cup soy sauce
  • 1 teaspoon black peppercorns
  • 5 bay leaves
  • 2 tablespoons chicken powder (powdered bouillon)
  • 1 cup coconut milk
  • 3 scallions, sliced into 2-inch pieces
  • Salt and ground pepper to taste
steps
  1. Heat a large pot over medium-high. Add oil then add onion, garlic, and ginger. Sauté until lightly browned, about 5 minutes, then add pork belly and cook, turning, until all sides are seared.
  2. Add 3 cups water, vinegar, soy, peppercorns, bay leaves, and chicken powder. Bring to a boil, then cover and lower heat to medium-low; simmer until pork is tender, about 45 minutes.
  3. Add coconut milk and scallion and continue to simmer 5 minutes more. Season with salt and pepper.
