2 tablespoons minced ginger
1 tablespoon minced garlic
½ red onion, thinly sliced
2 stalks lemongrass, sliced into 2-inch segments and smashed
3 scallions, sliced into 2-inch pieces
4 tablespoons kalamansi juice
½ cup soy sauce
¼ cup rice vinegar
½ can Sprite
1 teaspoon salt
1 teaspoon sugar
2 pounds pork shoulder (cut into 2-inch square chunks)
1 cup banana ketchup
3 tablespoons soy sauce
1 teaspoon sesame oil
20 bamboo skewers soaked in water

For the pork marinade:
- Combine all ingredients except pork in a large dish. Add pork and marinate for 12 hours.
For the pork skewers:
- Preheat grill to 400.
- Mix ingredients for basting sauce together with 3 tablespoons of water in a bowl. On each bamboo skewer, skewer 4 pieces of pork.
- Cook skewers on one side for 4 to 5 minutes, then flip and brush with basting sauce. Flip again and baste the other side; repeat until desired doneness, about 10 to 12 more minutes.
