Pork Skewers

Pork Skewers by Nikko Cagalanan

Note: Pork will need to marinate for 12 hours.

Serves 6 to 8

    Ingredients
    For the marinade
  • 2 tablespoons minced ginger
  • 1 tablespoon minced garlic
  • ½ red onion, thinly sliced
  • 2 stalks lemongrass, sliced into 2-inch segments and smashed
  • 3 scallions, sliced into 2-inch pieces
  • 4 tablespoons kalamansi juice
  • ½ cup soy sauce
  • ¼ cup rice vinegar
  • ½ can Sprite
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 2 pounds pork shoulder (cut into 2-inch square chunks)
  • For the basting sauce
  • 1 cup banana ketchup
  • 3 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • Special equipment
  • 20 bamboo skewers soaked in water

For the pork marinade:

  1. Combine all ingredients except pork in a large dish. Add pork and marinate for 12 hours.

For the pork skewers:

  1. Preheat grill to 400.
  2. Mix ingredients for basting sauce together with 3 tablespoons of water in a bowl. On each bamboo skewer, skewer 4 pieces of pork.
  3. Cook skewers on one side for 4 to 5 minutes, then flip and brush with basting sauce. Flip again and baste the other side; repeat until desired doneness, about 10 to 12 more minutes.
