Portabella BBQ Sandwiches

BBQ sandwiches are the ideal meal and perfect for any season. They’re especially great in the summertime if you’re craving that barbecue flavor but don’t want to venture into the blistering heat. Prepare the glaze with ingredients like yellow mustard, balsamic vinegar, and garlic for a flavorful bite. Add on coleslaw for a nice crunch. This recipe for BBQ sandwiches makes two so you can tuck into your meal with someone else. Or, serve at a party.

Makes 2 sandwiches

    Portabella Mushroom Marinade:
  • 3 tablespoons balsamic vinegar
  • ½ teaspoon dried thyme
  • ½ teaspoon dried oregano
  • 2 garlic cloves, minced
  • Salt
  • 4 tablespoons olive oil
  • ½ tablespoon yellow mustard
  • 2 (7- to 8-inch) portabella mushroom caps
  • Portabella Mushroom Marinade
  • 2 slices Gouda cheese
  • 2 hamburger buns
  • 4 ounces coleslaw
  • Central BBQ mild sauce

Combine marinade ingredients. Brush mushroom caps with marinade. Grill marinated mushroom caps until tender, 4 to 5 minutes per side. Place a cheese slice on top of each cap while still on the grill and let the cheese melt. Layer mushroom caps and cheese onto the hamburger buns. Add coleslaw and drizzle with sauce.
