Preserved Lemons

Makes 6 to 8 Lemons

    ingredients
  • 6-8 lemons, scrubbed
  • 2 tablespoons kosher salt
  • Olive oil

  • Note: Lemons will need to be prepared 3 to 5 days in advance.
steps
  1. Trim off ends of lemons, cutting about ¼-inch from each end.
  2. Keeping lemons attached at the bottom end, cut each into quarters partially through to expose the interior of the fruit.
  3. Place lemons in a large glass jar and press down to release some of the juices.
  4. Sprinkle salt over lemons, then fill jar with olive oil, adding enough to submerge lemons.
  5. Refrigerate for 3 to 5 days before using.
