Makes 6 to 8 Lemons
6-8 lemons, scrubbed
2 tablespoons kosher salt
Olive oil
Note: Lemons will need to be prepared 3 to 5 days in advance.

- Trim off ends of lemons, cutting about ¼-inch from each end.
- Keeping lemons attached at the bottom end, cut each into quarters partially through to expose the interior of the fruit.
- Place lemons in a large glass jar and press down to release some of the juices.
- Sprinkle salt over lemons, then fill jar with olive oil, adding enough to submerge lemons.
- Refrigerate for 3 to 5 days before using.
