Makes 1 cocktail
5 to 10 drops butterfly pea flower extract
1 oz fresh lemon juice
1 oz simple syrup
Mint sprigs
Soda water
Garnish: fresh mint and lemon peel
Ingredients

- Add butterfly pea flower extract to bottom of a highball glass filled with ice.
- Add lemon juice, simple syrup, 1 ounce of water, and mint to a cocktail tin filled with ice.
- Shake and strain into highball glass and top with soda. (Optional: Add New Riff Bourbon or Kentucky Wild Gin.)
