Grilled Cucumber and Tomato Salad

  • 2 tablespoons white vinegar
  • ½ teaspoon sugar
  • 1 tablespoon benne seed oil
  • 2 large cucumbers grilled whole and then sliced into bite-sized pieces
  • 3 cups sun gold tomatoes, halved
  • ½ small red onion, julienned
  • Salt and black pepper 

In large mixing bowl, mix vinegar, sugar, and oil. Add cucumbers, tomatoes, and red onions. Season to taste and serve.
