½ ounce Cognac
½ ounce Apple brandy
½ ounce Fresh lemon juice
½ ounce Vanilla simple syrup
Combine all ingredients with ice in a mixing tin and shake. Strain into a wine flute, and top with Champagne. Garnish with a lemon peel horse’s neck.
