1½ ounces Manzanilla sherry
½ ounce Pedro Ximenez sherry
½ ounce demerara syrup
½ ounce cream
1 whole egg
Garnish: nutmeg

Combine first five ingredients in a cocktail tin and shake vigorously to froth egg. Add ice and shake again. Double-strain into a coupe and garnish with grated nutmeg.
