Makes 1 cocktail
1½ ounces Wonderbird No. 61 gin
¾ Cocchi Americano or Lillet Blanc
½ ounce Strawberry Mint Shrub (recipe follows)
½ ounce lemon juice
Garnish: Fanned strawberry half or pickled strawberry
1½ cups sugar
1 cup red wine vinegar
4 cups sliced strawberries
15-20 sprigs mint
Pinch salt

For the Strawberry Mint Shrub
- Add sugar to a container and add strawberries on top. Muddle well to begin the maceration process. Let sit for at least a half hour and muddle again.
- Tear the mint and add to mixture. Muddle again lightly but don’t overwork to avoid bruising the mint. Add vinegar and salt; stir thoroughly to incorporate and make sure the sugar in the corners and on the bottom is getting integrated. Allow to sit for a few hours or overnight in the fridge.
- Bring mixture to room temperature and then run through a fine mesh strainer. Use immediately or store in fridge up to 1 month.
For the Strawberry Mint Cocktail
Add all ingredients to a mixing tin. Ice and shake to dilute and chill. Double strain into a rocks glass over a large rock. Garnish with a fanned strawberry half or pickled strawberry.
