Strawberries are ideal for a number of sweet treats, and this strawberry rhubarb margarita is no exclusion. In just a few steps, you’ll have this invigorating cocktail sitting right before you. Mix strawberries, Aperol, and tequila along with fennel and rhubarb. Notice the distinct flavors of the latter two that contrast the strawberry’s sweetness. Throw on soda water and garnish with cilantro for more sharpness to this drink. Sip on this strawberry rhubarb margarita whenever you please and it’ll make your day.

Makes 1 cocktail

    Ingredients
  • 4 strawberries, diced into ½-inch cubes
  • ½ fennel bulb, diced into ½-inch cubes
  • 1 stalk rhubarb, diced into ½-inch cubes
  • 1½ ounces Espolon Blanco Tequila
  • ½ ounce aperol
  • Soda water
  • Garnish: Sliced strawberry, cilantro sprig
steps

In a cocktail tin, combine strawberries, fennel, rhubarb, tequila, and aperol and shake. Strain into a rocks glass, add ice, and top with a splash of soda water. Garnish with sliced strawberry and cilantro sprig.
