  • 2 medium sweet potatoes, peeled and quartered lengthwise
  • 1 tablespoon mayonnaise
  • ½ teaspoon dried ginger, Drizzle dark honey
  • 1 teaspoon sweet relish
  • 2 slices cooked bacon, chopped
  1. Boil potatoes until al dente and drain.
  2. Place in bowl and add mayonnaise, ginger, honey, and relish while potatoes are hot so flavors absorb. Mix well and chill.
  3. To serve, top with freshly chopped bacon.
