2 medium sweet potatoes, peeled and quartered lengthwise
1 tablespoon mayonnaise
½ teaspoon dried ginger, Drizzle dark honey
1 teaspoon sweet relish
2 slices cooked bacon, chopped
- Boil potatoes until al dente and drain.
- Place in bowl and add mayonnaise, ginger, honey, and relish while potatoes are hot so flavors absorb. Mix well and chill.
- To serve, top with freshly chopped bacon.
