1 cocktail

  • 1 ounce Citadelle gin
  • ½ ounce sage liqueur
  • ½ ounce pineapple shrub*
  • 1 ounce dry sparkling wine
  • *Pulled straight out of the colonial era, shrubs are also known as drinking vinegar.

In a cocktail tin, combine first three ingredients with ice. Shake and strain into chilled coupe. Top with dry sparkling wine.
