1 gallon water
1 cup kosher salt
¼ cup honey
¼ cup sugar
6 bay leaves
15 leaves of fresh sage
15 cloves of garlic
1 tablespoon black peppercorns
6 sprigs of rosemary, cleaned
1 cup white vinegar
2 cups lemon juice
1 large yellow onion, chopped
3 dozen jumbo chicken wings
Ingredients

- Blend all ingredients (excepting chicken wings) in a blender until completely incorporated.
- Place in a large container, add chicken wings and marinate in refrigerator for at least 24 hours.
- Remove from brine and grill, roast or fry your wings – it’s your choice, as all versions will be delicious and juicy!
