Makes 1.5 cups

    ingredients
  • 1 cup whole milk greek yogurt
  • ½ cup parsley, leaves and tender stems only, chopped
  • ½ cup baby spinach leaves
  • 3 tablespoons dill, chopped
  • 2 tablespoons basil, chopped
  • 2 tablespoons chives or green onions, green parts only, chopped
  • 2 tablespoons lemon juice
  • 2 teaspoons lemon zest
  • 2 garlic cloves
  • 2 anchovies
  • Salt and freshly ground black pepper
  • ⅓ cup extra virgin olive oil
steps
  1. Add the yogurt, parsley, spinach, dill, basil, chives, lemon juice, lemon zest, garlic, anchovies, and a pinch of salt and pepper to the bowl of a food processor. Pulse until smooth and creamy.
  2. With the food processor running, slowly drizzle in the olive oil. Season with more salt and pepper to taste. Refrigerate in an airtight container for up to 5 days.
