Makes 1.5 cups
1 cup whole milk greek yogurt
½ cup parsley, leaves and tender stems only, chopped
½ cup baby spinach leaves
3 tablespoons dill, chopped
2 tablespoons basil, chopped
2 tablespoons chives or green onions, green parts only, chopped
2 tablespoons lemon juice
2 teaspoons lemon zest
2 garlic cloves
2 anchovies
Salt and freshly ground black pepper
⅓ cup extra virgin olive oil

- Add the yogurt, parsley, spinach, dill, basil, chives, lemon juice, lemon zest, garlic, anchovies, and a pinch of salt and pepper to the bowl of a food processor. Pulse until smooth and creamy.
- With the food processor running, slowly drizzle in the olive oil. Season with more salt and pepper to taste. Refrigerate in an airtight container for up to 5 days.
