12 ounces dark beer
¼ cup Worcestershire sauce
1 tablespoon Tabasco
1½ pounds sirloin steaks, trimmed
3 tablespoons finely ground espresso
1 tablespoon pure chile powder
1 teaspoon ground cumin
1 teaspoon sugar
½ teaspoon cayenne
Salt and pepper to taste

- Mix beer, Worcestershire, and Tabasco in large freezer-weight zipper-lock bag. Put steaks in bag, seal, and refrigerate overnight.
- Remove steaks from marinade, pat dry and discard marinade. Mix remaining ingredients and rub spice mixture onto steaks.
- Grill steaks to desired temperature.
