1 quart beet juice
1 cup sugar
¾ ounce lemon juice
2 ounces Hendrick’s gin
Fresh mint for garnish
- Make the beet molasses: Reduce over heat 1 quart of fresh beet juice until it is 8 ounces in volume. Add 1 cup sugar and allow to cool.
- Assemble drink: Measure ¾ ounce homemade beet molasses with lemon juice and gin in a cocktail tin. Shake with ice and strain into a freshly iced Collins glass. Finish with soda water and garnish with fresh mint.
