    Beet Molasses
  • 1 quart beet juice
  • 1 cup sugar
  • Cocktail
  • ¾ ounce lemon juice
  • 2 ounces Hendrick’s gin
  • Soda water
  • Fresh mint for garnish
  1. Make the beet molasses: Reduce over heat 1 quart of fresh beet juice until it is 8 ounces in volume. Add 1 cup sugar and allow to cool.
  2. Assemble drink: Measure ¾ ounce homemade beet molasses with lemon juice and gin in a cocktail tin. Shake with ice and strain into a freshly iced Collins glass. Finish with soda water and garnish with fresh mint.
