A holiday gathering wouldn’t be complete without the addition of a festive appetizer. This holiday season, fire up your Big Green Egg to make baked brie cooked in puff pastry that is sure to impress your guests.

1-8 ounce wheel of brie
1 sheet frozen puff pastry, thawed
Fresh herbs of choice

- Set the Big Green Egg for indirect cooking with a convEGGtor at 350 degrees.
- Use a sharp knife to score the top of the brie. Roll out the puff pastry and dust a work surface with a small amount of flour. Unwrap one sheet of puff pastry and place it on the flour. Coat a rolling pin with flour and roll out the puff pastry into a rough 11-inch square. Wrap the pastry dough around the brie.
- Line a cast iron skillet with with parchment paper and place wheel of brie in the middle of the skillet. Bake for 15-20 minutes. The cheese should be soft, but not completely melted out of shape. Garnish with fresh herbs and enjoy with rustic crackers or bread.
