40 pieces

  • 4 duck breasts, skinned
  • 2 cups orange juice
  • 1 cup Kikkoman soy sauce
  • 1 pound bacon, each slice cut in half
  • 3-4 jalapeños, sliced
  • Toothpicks
  1. Cut duck breast crosswise into ½-inch-wide pieces. In a medium bowl, whisk to combine orange juice and soy sauce. Marinate the duck in mixture for 2 hours in the refrigerator.
  2. Place a duck strip onto a bacon strip. Place one jalapeño slice in the middle of the duck. Roll the layers together and fasten with a toothpick. Repeat with rest of pieces. Put oven on low broil. Place bites onto a baking sheet and broil for 10–12 minutes, or until browned.
