Creamed String Beans

At Kultura in Charleston, chef Nikko Cagalanan shares this recipe for creamed string beans as part of his table-wide spread for a Kamayan feast.

Serves 6-8

    Ingredients
  • 1 tablespoon vegetable oil
  • 2 pounds string beans
  • 1 white onion, diced
  • 5 garlic cloves, crushed
  • 3 thumbs ginger, cut into thin strips
  • 1 can coconut milk
  • 1 tablespoon chicken bouillon
  • 1 teaspoon fish sauce
  • Salt and pepper to taste
  • 3 scallions, cut into 2-inch pieces
steps
  1. In a large pan, heat oil over medium.
  2. Sauté onion, garlic, and ginger for 3 minutes. Add string beans and sauté for 1 minute, then add coconut milk, bouillon, fish sauce, and salt and pepper.
  3. Bring to a simmer for 8 minutes, then add scallion and cook for 3 minutes more.
  4. Adjust seasoning with salt and pepper or fish sauce.
