Serves 6-8
1 tablespoon vegetable oil
2 pounds string beans
1 white onion, diced
5 garlic cloves, crushed
3 thumbs ginger, cut into thin strips
1 can coconut milk
1 tablespoon chicken bouillon
1 teaspoon fish sauce
Salt and pepper to taste
3 scallions, cut into 2-inch pieces

- In a large pan, heat oil over medium.
- Sauté onion, garlic, and ginger for 3 minutes. Add string beans and sauté for 1 minute, then add coconut milk, bouillon, fish sauce, and salt and pepper.
- Bring to a simmer for 8 minutes, then add scallion and cook for 3 minutes more.
- Adjust seasoning with salt and pepper or fish sauce.
