Serves 4

  • 4 ears of corn, husked
  • ¼ cup mayonnaise
  • ¼ cup sour cream
  • 1 lime, cut into wedges
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • ½ cup crumbled cotija cheese
  • 1 teaspoon Tajin
  • Chopped cilantro for garnish
  1. Preheat your grill to medium-high heat. Alternatively, preheat your oven to 400 degrees. 

  2. Place corn on grill and cook, turning occasionally, until lightly charred on all sides, about 10 to 12 minutes. If cooking corn in oven, roast for 20 to 25 minutes. Remove from heat and let cool slightly.

  3. In a small bowl, whisk to combine mayonnaise, sour cream, juice of half a lime, garlic powder, salt, and pepper. 

  4. Remove corn from cob and portion it into individual bowls. Top with lime crema sauce, cotija cheese, and Tajín, and serve with lime wedges and chopped cilantro.
