Satisfy your oyster’s summer peach craving with Mr. Crisp chef Gregory McPhee’s sweet meets savory twist to a mignonette.
5 tablespoons rice wine vinegar
5 tablespoons apple cider vinegar
3 ⅓ tablespoons lime juice
2 small peaches, finely diced
1 tablespoon shallot, finely diced
5 large shiso leaves
- Heat the vinegars in a sauce pot until they reach a low simmer.
- Remove from heat and add the shallots and peaches to the mixture. Allow to cool to room temperature.
- Add the lime juice and mix well. Right before serving, chiffonade the shiso leaf and mix.
