Mr. Crisp Peach & Shiso Mignonette

Satisfy your oyster’s summer peach craving with Mr. Crisp chef Gregory McPhee’s sweet meets savory twist to a mignonette.

1 Cup

  • 5 tablespoons rice wine vinegar
  • 5 tablespoons apple cider vinegar
  • 3 ⅓ tablespoons lime juice
  • 2 small peaches, finely diced
  • 1 tablespoon shallot, finely diced
  • 5 large shiso leaves

  1. Heat the vinegars in a sauce pot until they reach a low simmer.
  2. Remove from heat and add the shallots and peaches to the mixture. Allow to cool to room temperature.
  3. Add the lime juice and mix well. Right before serving, chiffonade the shiso leaf and mix.
