Pimm’s Spritz

Bobby Heugel’s easy-drinking mash-up of a spritz and the Pimm’s Cup is less bitter than the bubbly original and more buoyant than the classic Wimbledon cooler. It’s also easy to build and well-endowed in the garnish department, making it a no-brainer for entertaining.

Makes 1 cocktail

    ingredients
  • 2 ounces Pimm’s No. 1
  • ¾ ounce lemon juice
  • ½ ounce simple syrup
  • Sliced cucumber
  • Sliced orange
  • Champagne
  • Garnish:
  • fanned slices of cucumber speared with a large mint sprig
steps
  1. In a cocktail tin, combine Pimm’s, lemon juice, and simple syrup and dry-shake (without ice) to
    combine. Pack a tulip glass with crushed ice, sliced cucumber, and sliced orange, then pour in
    the Pimm’s mixture. Top with Champagne. Garnish with fanned slices of cucumber speared with
    mint sprig, then insert straw.
