Makes 6 cups

    Ingredients
  • 1 quart red or orange habaneros
  • 2 quarts white vinegar
  • 1 cup finely chopped garlic
  • 2 cups sugar
  • 3 tablespoons salt
steps

Combine all ingredients in a large, nonreactive pot and cook until habaneros are soft. Cool slightly, then transfer to a blender and puree until smooth.
