This large-format drink from bar director Antoine Hodges of Ilda in Sylva, North Carolina, works equally well with vodka or bourbon. You will make your own hibiscus tea and turmeric honey for this. Both must be at room temperature before assembling the punch, so be sure to plan accordingly.

Serves 8

    Ingredients
  • 12 ounces dark rum (This drink also works with vodka or bourbon)
  • 24 ounces hibiscus tea
  • 6 ounces turmeric honey
  • 6 ounces lime juice
  • 4 ounces allspice dram
  • Garnish: Dehydrated mango, lime, and orange
  • For the hibiscus tea
  • 24 ounces water
  • 1 cup dried hibiscus flowers
  • For the turmeric honey
  • 8 ounces honey
  • 8 ounces hot water
  • 2 teaspoons turmeric
  • Black pepper

  1. Make the hibiscus tea: Bring water to a boil, add dried hibiscus flowers, and allow to steep at least 10 minutes. Strain tea and bring to room temperature or chill before using.
  2. Make the turmeric honey: In a vessel, combine honey with hot water. Mix in turmeric and a pinch of finely ground black pepper.
  3. In a large vessel, combine rum, hibiscus tea, turmeric honey, lime juice, and allspice dram. Add ice to a large pitcher and pour punch over ice. Garnish with dehydrated fruit.
