Dried sage leaves for smoking
2 ounces reposado tequila
½ ounce Make & Muddle 3 Herb Gracious Grapefruit Syrup or substitution
Dash lemon, lime, or grapefruit bitters
Fresh or dried sage leaves or grapefruit peel for garnish
Special equipment: Wooden cutting board or coaster, or smoke lid

½ ounce grapefruit lime syrup
½ ounce thyme, rosemary, and sage syrup
For Smoked Tequila Old Fashioned
For 3-Herb Gracious Grapefruit Syrup Substitution
steps
- Fill a rocks glass with ice water.
- Place sage in a smoke lid or on a food-grade wooden surface and light until steadily burning.
- Dump out glass and place upside-down over smoking sage.
- Once glass is filled with smoke, turn it over and cover to trap smoke inside.
- Meanwhile, to a cocktail tin filled with ice, add tequila, syrup, and bitters and stir until cold, about 20 seconds.
- Lift cover on glass and quickly add fresh ice, then immediately strain cocktail into glass. Garnish as desired.
To make the 3-Herb Gracious Grapefruit Syrup Substitution
- Bring 1 cup sugar and 1 cup water to a boil. Remove from heat and transfer half to another pan. To the first pan, add the peel of half a grapefruit and the peel of 1 lime. Cover and steep for at least 2 hours.
- To the second pan add 5 stems fresh thyme, 2 stems fresh rosemary, and 2 stems fresh sage and steep for up to 2 hours. Strain both syrups and store in the refrigerator for up to 1 month.
