2 ounces Plantation 3-star white rum (41.2% ABV)
¾ ounce snap pea cordial*
¾ ounce lime juice
5 drops 20% saline solution
100 g cold-pressed snap pea juice
90 g sugar
1.8 g citric acid
0.3 g ascorbic acid
0.6 g salt

For the Snap Pea Cordial

Make the Snap Pea Cordial
- Mix all ingredients until completely combined.
- Bottle and refrigerate. Keeps 1 week.
Make the Cocktail
- Add all ingredients to a cocktail shaker and shake hard.
- Strain into Pony glass.
- Garnish with pea shoots.
