Strawberries are ideal for a number of sweet treats, and this strawberry rhubarb margarita is no exclusion. In just a few steps, you’ll have this invigorating cocktail sitting right before you. Mix strawberries, Aperol, and tequila along with fennel and rhubarb. Notice the distinct flavors of the latter two that contrast the strawberry’s sweetness. 4 strawberries, diced into ½-inch cubes
½ fennel bulb, diced into ½-inch cubes
1 stalk rhubarb, diced into ½-inch cubes
1½ ounces Espolon Blanco Tequila
½ ounce aperol
Soda water
Garnish: Sliced strawberry, cilantro sprig
