Michael Letchworth has opinions about tailgating. After all, the business partner at Sam Jones BBQ has been to his share game-day festivities and outdoor cookouts in eastern North Carolina. His three rules: Plan ahead, don’t overdo the menu, and it’s alright to cut corners sometimes. His super simple pork tenderloin recipe follows all of these rules. Using Sam Jones BBQ Rub Potion No. Swine keeps the ingredients list to two items—pork and the rub. Its simplicity makes it easy pull off while tailgating before the game. However, if you want to prep in advance, you can grill or smoke the meat the evening before, and then warm it over the grill before it’s time to serve.

yields

2 tenderloins

    Ingredients
  • 2 pork tenderloins
  • 1 bottle Rub Potion No. Swine
steps
  1. Preheat grill to 350 degrees. Use Sam Jones Rub Potion No. Swine to generously coat each tenderloin. Let meat sit for 15 to 20 minutes.
  2. Place meat over direct heat on grill or smoker and cook until internal temperature reaches 140 degrees. If meat gets too much color before internal temperature is achieved, wrap with tin foil or move to indirect heat until done. Let meat rest for 10 to 20 minutes before serving.
