Created by James Bolt from The Gin Joint in Charleston, this rum cocktail uses Goslings Family Reserve Old Rum and a homemade jerk syrup to channel Caribbean flavors. Goslings Family Reserve Old Rum is produced from the same blend of ingredients used in the brand’s flagship Black Seal Rum, and it ages for around 20 years in oak barrels to develop its earthy, robust flavor profile. Matched with a balance of bitters and sweetness, this rum cocktail needs only three ingredients to build its rich flavor.
Dilution is key to achieving the Gentleman Pirate’s balanced flavors, so stir the ingredients with ice for at least 30 seconds before straining onto a fresh, large rock. Bolt prefers garnishing the drink with a dehydrated lime wheel, but you can also use the peel from a fresh lime, depending what you have on hand.

½ ounces Jerk Demerara Syrup
3 to 4 dashes Bittercube Bolivar Bitters
1½ cups demerara sugar
1 tablespoon jerk seasoning

Make the Jerk Demerara Syrup:
- In a small pot, combine sugar, jerk seasoning, and 1 cup water and bring to a simmer over medium heat. Let
- Turn heat off and let mixture stand for 15 to 20 minutes to infuse syrup with seasoning. Strain through a fine mesh strainer into a separate container. Syrup will keep 1 week in refrigerator.
Assembly:
- In a mixing glass, combine Goslings, Jerk Demerara Syrup, bitters, and top with ice. Use a bar spoon to stir cocktail for 30 to 35 seconds. Strain into a rocks glass with one large rock. Garnish with a dehydrated lime wheel.
