1½ cups goat cheese
½ cup heavy cream
4 cups tomatoes, medium dice
2 cups peaches, thinly sliced half moons
¼ cup shallot, thinly sliced
½ cup sherry vinegar
½ cup extra virgin olive oil
4 1-inch-thick slices of bread, toasted
2 tablespoons fresh mint, chiffonade

- Add goat cheese to food processor or stand mixer fitted with a whisk attachment and mix on medium speed until goat cheese is soft and spreadable. Slowly add in cream; increase speed to high and mix until the goat cheese turns light and fluffy and resembles whipped cream. (You may need to add more cream depending on goat cheese density.) Refrigerate until ready to use.
- In a medium bowl, combine tomatoes, peaches, shallot, vinegar, and olive oil. Set aside.
- Spread an even layer of whipped goat cheese over each slice of toasted bread. Top with tomatoes and peaches, taking care to leave behind excess oil and vinegar. Top with mint and salt and pepper to taste. Cut each slice in half to serve.
