Knight recommends using frozen fruit, either store-bought or fresh-to-frozen, in place of ice so the cocktails sustain their flavor even as they melt in the heat. The unexpected addition of this bourbon smash: coconut oil. Adding both tropical essence and a smoothing factor to the consistency, coconut oil serves as the unsung hero of this cocktail.
½ cup frozen blueberries
1 whole peach
1 tablespoon coconut oil
2 ounces fresh orange juice
1½ ounces bourbon
Garnish: Mint sprig
- Combine all ingredients in a blender and process to desired consistency. Serve in a chilled rocks glass and garnish with mint sprig.
