Makes 4 (3-inch) tarts
2 ounces toasted pecan pieces, divided
3 large eggs
2 cups heavy cream
1 cup whole milk
Pinch of freshly grated nutmeg
½ teaspoon salt
⅛ teaspoon pepper
4 (3-inch) tart shells
2 ounces smoked gouda, divided

- Preheat oven to 350 degrees. Place pecans on a baking sheet and toast in the oven until fragrant.
- Remove and allow to cool; meanwhile, place tart shells on a baking sheet and bake for 13 to 15 minutes.
- Set aside at room temperature.
- Reduce oven temperature to 275 degrees.
- In a bowl, beat eggs and mix in heavy cream, milk, nutmeg, salt, and pepper.
- Sprinkle each tart shell with ½ ounce toasted pecans and ½ ounce gouda.
- Place baking sheet on oven rack; pour equal amounts of egg mixture into each shell to just below shell rim. Bake until filling is set, 15 minutes.
