1½ ounces Roots of Ruin
½ ounce Carpano Bianco
½ ounce lemon juice
½ ounce Raspberry Syrup (recipe follows)
1 egg white
6 ounces fresh raspberries (1 clamshell)
6 ounces water
6 ounces sugar

Make the Raspberry Syrup
- Combine raspberries and water in a saucepan and bring to a boil at 220 degrees. Immediately lower heat and simmer for 5 minutes.
- Remove raspberries from heat and strain through a mesh strainer, pressing to extract juice. Filter juice through a coffee filter, then add to a clean pot and place over high heat. As juice heats, add sugar; bring to a boil and cook, stirring, until sugar is fully dissolved. Allow to cool.
Put It All Together
Combine all ingredients in a shaker, without ice, and dry shake to emulsify all ingredients. Then add ice and shake. Finally, fine strain into a coupe glass .
