A longstanding staple at most bars or cocktail lounges, the gin gimlet is a simple, crisp, and irresistibly refreshing cocktail perfect for all occasions. Traditionally made with just gin, lime juice, and a touch of sweetener, the gimlet is beloved for its bright citrus notes and simplicity. But when the holidays come around, even the most iconic cocktails deserve a little flair. This elevated version leans into the season with an aromatic twist using Daysol’s Lavender Rosemary Syrup. The syrup transforms the traditional gimlet’s profile into something more nuanced and undeniably festive. The rosemary adds a wintery warmth, while the floral notes of the lavender bring a subtle elegance fit for holiday gatherings.

A festive gimlet like this one practically begs to be served at the start of an evening. Its bright aromatic flavors create a profile that pairs beautifully with a holiday aperitivo spread. Think herb-forward snacks like rosemary focaccia, marinated olives, or a soft goat cheese drizzled with honey. For a more substantial pairing, offer salty or crunchy textures, like spiced nuts, prosciutto-wrapped pears, or a simple charcuterie board with brie and crusty bread. The key is to keep the flavors light, bright, and herb-friendly, and to let the cocktail shine.

Behind the Brand

Daysol Coffee, located in Johnson City, Tennessee, began as a passion project shaped by curiosity, community, and a love for experimenting with flavor. Founders Heather and Dallas Sells built Daysol Coffee Lab around the idea that coffee should be an experience—one rooted in craftsmanship and connection. That same spirit carries into their line of small-batch syrups, which reflect their commitment to quality and creativity. Daysol’s Lavender Rosemary Syrup is crafted with the same recipe the team uses in their own coffee shop, where fresh herbs and thoughtful technique take center stage. A drizzle of this syrup instantly elevates everything it touches, from lattes and lemonade to ice cream, so it’s no surprise that it slips effortlessly into cocktails.
