This riff on the classic cocktail, the aviation, swaps out crème de violette and gin in favor of Trä Kál, an botanical and herbaceous spirit from Patagonia,.“It’s sort of like an eau de vie made with apples and pears and herbs,” says Hayley Teague, the bartender at Hathorne in Nashville. For the rose water spritz, which adds a floral nose to the drink, she prefers using brands like Cortas or Fee Brothers.

Makes 1 cocktail

    Ingredients
  • 2 ounces Trä Kál
  • ¾ ounce grenadine
  • ½ ounce dry curaçao
  • ¾ ounce lemon juice
  • Spritz of rose water
  • Garnish: Pastel-colored violet

  • For the Grenadine
  • sugar
  • pomegranate juice,
  • a whisper of orange blossom water
steps
  1. In a cocktail tin, combine Trä Kál, grenadine, curaçao, and lemon juice.
  2. Add ice and shake vigorously until frost forms on the tin.
  3. Strain once, then pour through a fine mesh strainer into a chilled coup.
  4. Spritz the top with rose water and garnish with violet.
