Makes about 4 servings
1 small pie pumpkin
Olive oil as needed
2 tablespoons brown sugar
Scant pinch fresh grated nutmeg
½ cup golden raisins, chopped
8 medjool dates, chopped
8 ounces haloumi cheese, sliced into 8 pieces
Parsley and pepitas for garnish

- Preheat oven to 350 degrees. Quarter and deseed pumpkin and rub with olive oil. Roast in oven until tender, about 40 minutes. Let cool, remove skin, and puree flesh in a blender. Reserve half of the puree for another use.
- In a mixing bowl, combine brown sugar, nutmeg, raisins, and dates; stir in puree.
- Heat a swirl of olive oil in a nonstick skillet over medium-high heat. Sear Halloumi on each side until golden brown, around 2 minutes per side.
- Spread puree into a serving dish, top with cheese, and garnish with parsley and pepitas.
