Shrove Tuesday, the day before Lent begins, is most frequently referred to as Mardi Gras. In many countries, though, it’s also celebrated as Pancake Day. For those of you throwing your own Pancake Day party, here’s one of our favorite flapjack recipes.

Add a handful of blueberries, chopped pecans or chocolate chips to the batter for variety or keep them plain for the pancake purists. If you decide to use frozen blueberries, do not thaw first — fold frozen berries into the batter. Thawed frozen berries will turn the whole batch blue.
