Eat a Stack for Pancake Day

Shrove Tuesday, the day before Lent begins, is most frequently referred to as Mardi Gras. In many countries, though, it’s also celebrated as Pancake Day. For those of you throwing your own Pancake Day party, here’s one of our favorite flapjack recipes.

Siblings Courtney, Ashleigh and Chase work together to prepare and serve three meals a day, and there is a constant line of locals waiting to get in the door. Chef Ashleigh Page’s pancakes are easy to make will beat any pancake that comes from a box. Add a handful of blueberries, chopped pecans or chocolate chips to the batter for variety or keep them plain for the pancake purists. If you decide to use frozen blueberries, do not thaw first — fold frozen berries into the batter. Thawed frozen berries will turn the whole batch blue.
