More often than not, someone is sipping a P.Star martini at Maru in Tampa, Florida, a Nikkei-inspired rooftop cocktail bar. The “p” stands for pisco in this nod to the Pornstar Martini that’s served with a side of bubbly to be poured on top, a counterpart to the smooth and creamy egg white foam of their traditional pisco sour. “With the P.Star, you’re going to have more of the sweetness note to it with that little sidecar of Champagne,” says Cole Biondi, bar manager. “I’d say the pisco sour is more of a refreshing cocktail, with that hint of egg white in there.”
Biondi and the Maru team designed the drink menu with a section just for pisco cocktails. “[Pisco] is little different to everybody, but I would say it’s like a rum because it’s a little sweet, but it’s made from grapes, so it does have that acidity with it.” Biondi recommends pair- ing their classic pisco sour with ceviche, and the P.Star with something spicy.
